Baked Apple Cinnamon Oatmeal {To-Go}

These simple grab and go baked Apple oatmeal’s are the perfect quick and healthy way to start your day!

¬† I wasn’t planning on doing any more posts before the sale, but this one was too great to not post about. I LOVE oatmeal. I am always trying to find different ways to make it. I am loving these individually portioned grab-and-go ones! They are super versatile as well. If you don’t like apples, go ahead and throw in a different Thrive fruit. I personally think apples, cinnamon, and oatmeal belong together, so this combo worked for me. The Fuji’s hold up really well in the baking process as well. They don’t turn all mushy and gross like fresh apple pieces tend to do.

Awesome Muffin Liners

Awesome Muffin Liners are Essential

I cannot stress enough the importance of an amazing muffin liner for this recipe. Normal liners won’t work. You can try them, but I am guessing part of the oatmeal will be stuck inside when you pull it out. These parchment liners are magical. I have yet to bake anything in them that has stuck. I even did an egg-based recipe (coming soon) that didn’t stick at all. They are so worth it. I will never go back to having half of my muffins stick in the bottom of my liner. Buy them!

Leftovers and Eating Options

These little oatmeal gems freeze beautifully. I frequently double the batch and put the rest in a gallon-sized freezer Ziploc bag to keep on hand to throw in lunches or for a quick breakfast option. For breakfast, we love to throw one or two in a bowl and warm them up for a good 30 seconds in the microwave. Then I add a little almond milk and just break it all up. Delicious. We also love them cold with a little peanut butter slathered on top. Yum.

Apple Oatmeal Muffins

Baked Apple Cinnamon Oatmeal {To-Go}

12-16 muffins

Ingredients

  • 2 eggs
  • 1/2 cup unsweetened applesauce
  • 1/2 cup brown sugar
  • 1 cup unsweetened almond milk
  • 1 tsp. cinnamon
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 tsp. vanilla extract or Thrive Vanilla Powder
  • 2 cups quick oats
  • 1 cup Thrive Fuji Apple Slices (broken into pieces)

Instructions

  1. Preheat the oven to 350 degrees.
  2. Whisk together the eggs, applesauce, brown sugar, and milk in a medium-sized bowl until combined.
  3. Add the cinnamon, vanilla, baking soda, baking powder, and oats, and mix until combined.
  4. Break the apple slices into chunks and stir into batter until combined.
  5. Line a muffin tin with parchment muffin liners, and fill each cup 2/3 full of the oatmeal mixture.
  6. Bake at 350 for 15-20 minutes until set and lightly golden.
